A bright, zesty, brothy soup--a replica of one of my favorite entrees at our local mexican restaurant. Traditionally served fresh avocado and a topping of Tortilla strips. The rice is optional and will add to the heartiness if you like a thicker soup.

  1. In the bottom of 3 quart saucepan, salute garlic in olive oil over low heat just to infuse the oil.
  2. Add the water and all ingredients, except toppings.
  3. Simmer slowly for 15 to 20 minutes until the chicken is very tender.
  4. Plate and top with diced avocado/ cheese/ and tortilla strips, if desired.
  5. This recipe fits perfectly into a Canning jar to create a Jar Meal. Leave out the Olive Oil and toppings.
